Roasting notes/tips:

We always roast our Yirgacheffe to a medium roast, just into the second crack. However some people do prefer this coffee to be roasted lighter, this requires it to be dropped before the second crack. This coffee serves best as a black filtered coffee.

For me, this is the real deal of the coffee world. Beans with a distinctive yellow stripe once roasted, which I source from coffee's birthplace, Ethiopia, where it grows natively in its purist form and is still found in garden farms; growing in the wild all over this region. Hand-picked and sold in markets before being processed and selected at the mills.

Local knowledge is key to finding the best coffee crops at certain times of the year. Legend has it, coffee was first discovered in Ethiopia by a goat herder named Kaldi in the 9th Century when he noticed his goats behaving erratically after eating coffee cherries from the plants This is always a top seller, consistently bought and repeatedly bought by returning customers.

For a coffee this pure, we recommend a paper filter brew…..it also pulls a mean espresso!
