Product Information
Cherries are harvested by hand, and sorted before making their way to the flotation tanks.
Once floated to remove any floaters (the less dense, imperfect cherries), they ferment for 12-16 hours in a water filled tank.
Cherries are then dried on raised beds for between 4-5 weeks where they are regularly raked and turned to ensure even drying.
